Ingredients

For the Chicken Marinade

  • 1 kg (2.2 lb) bone-in chicken pieces
  • 1 cup plain yogurt
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon red chili powder (adjust to taste)
  • 1 teaspoon turmeric powder
  • 2 teaspoons biryani masala (or garam masala)
  • Salt, to taste

For the Rice

  • 3 cups basmati rice, soaked 30 minutes
  • 4-5 green cardamom pods
  • 2-3 whole cloves
  • 1 bay leaf
  • 1 cinnamon stick
  • Salt, to taste

For Layering & Assembly

  • 2 large onions, thinly sliced and fried until golden and crisp
  • 1/2 cup milk, warmed, with a pinch of saffron soaked in it
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons ghee or melted butter

Instructions

  1. Marinate the chicken: In a large bowl, combine the chicken with yogurt, ginger-garlic paste, chili powder, turmeric, biryani masala, and salt. Mix well, cover, and refrigerate for at least 1 hour (overnight gives the best flavor).
  2. Fry the onions: Heat oil in a heavy-bottomed pot and fry the sliced onions over medium heat, stirring often, until deep golden brown and crisp. Remove with a slotted spoon and set aside; keep about 2 tablespoons of the oil in the pot.
  3. Cook the chicken: In the same pot with the reserved oil, cook the marinated chicken over medium-high heat until the yogurt reduces and the chicken is about three-quarters cooked through and coated in a thick, fragrant masala, about 15-20 minutes.
  4. Parboil the rice: While the chicken cooks, bring a large pot of water to a boil with the cardamom, cloves, bay leaf, cinnamon stick, and salt. Add the drained, soaked rice and cook until it is about 70% done (still firm in the center). Drain immediately.
  5. Layer the biryani: Spread the cooked chicken and its masala evenly across the bottom of the pot. Top with the parboiled rice in an even layer. Scatter over the fried onions, coriander, mint, and drizzle with the saffron milk and ghee.
  6. Cook on dum: Cover the pot tightly with a lid (seal the edges with foil or dough if the lid is loose) and cook over very low heat for 20-25 minutes, letting the rice finish steaming in the sealed pot. Avoid lifting the lid while it cooks.
  7. Rest and serve: Turn off the heat and let the biryani rest, covered, for 10 minutes. Fluff gently with a fork, working from the side of the pot so you keep the layers intact, and serve hot.

  • Rinse and soak the basmati rice for at least 30 minutes; this helps the grains cook evenly and stay long and separate.
  • Don’t skip the parboiling step for the rice; fully cooking it before layering leads to mushy biryani.
